INGREDIENTS: Serves one at 240 calories for 1 whole muffin (2 halves)
Left over rotisserie chicken (1 oz per each half)
Thomas' 100 calorie English muffin (toasted)
Crumbled Blue Cheese (approx 1/2 Tbsp per half muffin)
4 red seedless grapes (cut into 8 bite size pieces)
1 Tbsp crumbled turkey bacon
1tsp. Hellmans "light" mayo
Arugula leaves (approx. 6-8)
Crushed red pepper to taste (optional)
DIRECTIONS:
Combine chicken, grapes, bacon and blue cheese with the teaspoon of light mayo.
Divide the mixture evenly, and put on each toasted half muffin.
Add Arugula to each half
Sprinkle with red pepper flakes for a "kick"
