It has been WEIGH too long since The Fairy Food Mother has updated her recipes and nutritional advice!!!!!!

Thanksgiving is around the corner and this is a great time to give THANKS for so much! Covid is now manageable and our families are all gathering together to feast on not only delicious FOOD, but family, friendship and fun. “STUFF this recipe into your Thanksgiving Feast:

CAULIFLOWER WALNUT STUFFUNG:

1 head cauliflower chopped/ separated into bite size pieces

1 small red onion finely chopped

2 scallions finely chopped (optional)

1 stalk celery (diced)

1 medium carrot (diced)

1 cup minced portobello mushrooms

1/2 cup walnuts

2 Tbsp parsley flake

1 Tbsp chopped garlic

1/4 tsp sage

1/4 cup canola or grapeseed oil

1/4 cup chicken broth, vegetable broth or water

1/2 cup egg white

1/2 Tbsp salt

Pepper to taste(@ least 1 tsp

Non stick cooking spray

On a Non stick sprayed cookie sheet roast cauliflower on 425” for 30 min or until edges look crisped.

use 2 Tbsp of the oil to Sauté onions, diced carrot and diced celery, garlic , parsley, scallion, walnuts and sage until onions appear golden .

Chop roasted cauliflower and combine with sauté mixture and chopped mushrooms.

Whisk egg white, broth or water together and add the salt and pepper.

Spray an 8” SQUARE FOIL or PYREX dish with Non stick spray

Mix in remaining 2 Tbsp of oil to above mixture

Bake on 375" for 30 min or until firm and top looks slightly brown.

FOOT BALL GAME FOOD CAN BE HEALTHY AND DELICIOUS!

CAULIFLOWER PIZZETTES: Made with cauliflower, eggwhites, Parmesan cheese and Kraft Fat Free Cheddar cheese  preserve the idea that game day food can be delicious and healthy. These mini footballs have a drizzle of non fat sour cream, and the tomato sauce is already mixed into the "dough" (cauliflower). The Fairy Food Mother added green pepper for extra flavor. QUINOA LETTUCE WRAPS "LETTUCE" indulge in Asian inspired YUMMINESS!

Did you know that QUINOA is a seed that is prepared and eaten as a grain? 1 cup of this super food is packed with 8 grams of protein, and is loaded with fiber and minerals. This gluten free SEED is in definite need as a part of your diet. This recipe will serve 4 people

INGREDIENTS

4 well sheaped leaves of lettuce (variety up top you)

8 oz diced white meat chicken breast( left ove from roasted chicken is a great idea)

If not, broil in oven with a little salt and pepper

2 scallions chopped

1/2 red bell pepper diced

1/4 Tsp. fresh minced ginger (optional)

1 Tablespoon of pine nuts

1/4 cup cilantro finely chopped (may sub basil instead or use combo)

2 Tablespoons seasoned rice wine vinegar

3 tablespoons low sodium soy sauce

1 cup prepared quinoa (according to box directions)

In a medium sized bowl combine All the ingredients, and allow them to marinate for 30 minutes or more. 

Drain excess liquid, and fill your "wraps"

Low Calorie Latkes: HEALTHY CHANNUKAH TO ALL!!!

You don't need 8 days worth of oil to make delicious LATKES! The whole miracle is that one days worth burned for 8!!!!!!!  Lighten your Latke (tradiditonal Jewish pancake) by shredding and squeezing the water out of one large  potato, combine with one egg, and a pre roasted mashed parsnip. Salt and pepper to taste. (Add chives, parsley and even some chopped broccoli if you like) Form into silver dollar size patties and spray a parchmentlined cookie sheet with olive oil spray. Spray the tops of your latkes too, Bake on 375 for 5 or so minutes on each side or until goldes brown.

ARUGULA RULES! 100 calorie English Muffin Chicken Salad Crostini

ARUGULA is very low in calories, has antioxident abilities as well as being rich in phytochemicals that have counter carcinogenic effects. Rich in Folate, Vitamins:A,B,C, and K. Arugula also is loaded with fiber. Here is a delicious crostini with Arugula......Get creative and use this leaf in salads, on pizzas and sandwiches!

INGREDIENTS: Serves one at 240 calories for 1 whole muffin (2 halves)

Left over rotisserie chicken (1 oz per each half)

Thomas' 100 calorie English muffin (toasted)

Crumbled Blue Cheese  (approx 1/2 Tbsp per half muffin) 

4 red seedless grapes (cut into 8 bite size pieces)

1 Tbsp crumbled turkey bacon

1tsp. Hellmans "light" mayo

Arugula leaves (approx. 6-8)

Crushed red pepper to taste (optional)

DIRECTIONS:

Combine chicken,  grapes, bacon and blue cheese with the teaspoon of light mayo.

Divide the mixture evenly, and put on each toasted half muffin.

Add Arugula to each half

Sprinkle with red pepper flakes for a "kick"

"Fall" for Chili, an easy heart healthy meal to keep on hand once summer is over!

Fall is on its way- that means cooler weather, more indoor cooking and healthful, but convenient dishes for the busy workweek as well as weekend activities!

This recipe is versatile enough to please everyone and is full of heart healthy vegetables, flavorful spices, fiber and lean protein.  The chili can also be made in large quantities and frozen in single or larger serving containers to take to work or have on hand for a day when you don’t feel like cooking.   Pair this up with a green salad and whole grain bread for a satisfying and easy meal.

 

Turkey Chili

makes 8 cups/ servings 

(recipe can be doubled for larger quantities)

1 1/3 lb lean ground turkey

1 tablespoon olive oil

½ teaspoon ground cinnamon

1 tablespoon ground cumin

1 tablespoon chili powder

½ teaspoon ground black pepper

1 small onion, finely chopped (vegetables and garlic can be chopped in food processor)

4 cloves garlic, minced

1 small red bell pepper, finely chopped

2 tablespoons water

4 oz tomato paste

2 bay leaves

½ teaspoon salt

3 1/2 cups low sodium chicken stock/broth

1 15oz can, drained kidney beans

Garnish: Top each bowl of chili with a sprinkle of green onions and 2 teaspoons low fat cheese or non-fat sour cream.

In large heavy bottom pot, brown turkey with olive oil, add cinnamon, cumin, chili powder, and pepper and cook for an additional 3 minutes.  Add onions, garlic, red bell pepper, and water,  allow to cook on medium heat until everything starts to soften (about 5 minutes). Stir in tomato paste, allow to cook for 2-3 minutes then add bay leaves, salt, and 3 cups of broth,  bring to a boil, reduce to simmer, partially covered (lid ajar), for 1½ – 2 hours, until reduced to a thick consistency, add kidney beans and remaining ½ cup of stock and heat thoroughly. Remove bay leaves before serving.

200 calories/cup with 18 grams of protein!

plenty of room to add a garnish of fat free cheddarand sour cream along with a tablespoon of avocado.....healthy never tasted so good!

Greek Inspired Turkey Meatloaf with "no Pasta" pasta and Roasted Cauliflower

INGREDIENTS

(Serves 4)

1 pound lean turkey breast (640 cal)

1/4 cup wheat germ (120 cal)

2 egg whites (40 cal)

2 Tbsp. Hellmanns low fat mayo (70 cal)

1 tsp garlic powder

2Tbsp dry oregano

1 tsp. red pepper flakes (optional)

1/4 cup (ATHENOS) fat free feta (35 cal)

1 bag Nasoya "pasta" (30 cal)

1/4 cup Prego heart smart tomato sauce (70cal)

Zest and juice of one lemon

1/3 cup English green peas (35 cal)

1/2 head of cauliflower

Salt and pepper to taste

INSTRUCTIONS

Pre heat oven to 375 degrees. In a foil roasting pan combine ground turkey with egg whites, 1 tbsp of oregano, 1 tsp of garlic powder, red pepper flakes, pinch of salt and pepper, and 1/4 cup of wheat germ. Combine well and gently fold in the Feta cheese. Form into a loaf and spread top with the low fat mayo. Sprinkle 2nd Tbsp. of oregano on top. Divide Cauliflower into florets and place around the loaf. Zest cauliflower with the lemon and squeeze the juice of the lemon on cauliflower as well. Bake for 1 hour or until cauliflower and loaf are golden brown.Rinse pasta according to instrictions. Combine the peas and tomato sauce with the "pasta" and toss well. Add salt and pepper to taste This taste bud provoking wonder is only 252 calories per serving.
