Did you know that QUINOA is a seed that is prepared and eaten as a grain? 1 cup of this super food is packed with 8 grams of protein, and is loaded with fiber and minerals. This gluten free SEED is in definite need as a part of your diet. This recipe will serve 4 people

INGREDIENTS

4 well sheaped leaves of lettuce (variety up top you)

8 oz diced white meat chicken breast( left ove from roasted chicken is a great idea)

If not, broil in oven with a little salt and pepper

2 scallions chopped

1/2 red bell pepper diced

1/4 Tsp. fresh minced ginger (optional)

1 Tablespoon of pine nuts

1/4 cup cilantro finely chopped (may sub basil instead or use combo)

2 Tablespoons seasoned rice wine vinegar

3 tablespoons low sodium soy sauce

1 cup prepared quinoa (according to box directions)

In a medium sized bowl combine All the ingredients, and allow them to marinate for 30 minutes or more. 

Drain excess liquid, and fill your "wraps"
