INGREDIENTS
(Serves 4)
1 pound lean turkey breast (640 cal)
1/4 cup wheat germ (120 cal)
2 egg whites (40 cal)
2 Tbsp. Hellmanns low fat mayo (70 cal)
1 tsp garlic powder
2Tbsp dry oregano
1 tsp. red pepper flakes (optional)
1/4 cup (ATHENOS) fat free feta (35 cal)
1 bag Nasoya "pasta" (30 cal)
1/4 cup Prego heart smart tomato sauce (70cal)
Zest and juice of one lemon
1/3 cup English green peas (35 cal)
1/2 head of cauliflower
Salt and pepper to taste
INSTRUCTIONS
Pre heat oven to 375 degrees. In a foil roasting pan combine ground turkey with egg whites, 1 tbsp of oregano, 1 tsp of garlic powder, red pepper flakes, pinch of salt and pepper, and 1/4 cup of wheat germ. Combine well and gently fold in the Feta cheese. Form into a loaf and spread top with the low fat mayo. Sprinkle 2nd Tbsp. of oregano on top. Divide Cauliflower into florets and place around the loaf. Zest cauliflower with the lemon and squeeze the juice of the lemon on cauliflower as well. Bake for 1 hour or until cauliflower and loaf are golden brown.Rinse pasta according to instrictions. Combine the peas and tomato sauce with the "pasta" and toss well. Add salt and pepper to taste This taste bud provoking wonder is only 252 calories per serving.
